You drive down Atlantic Avenue and you smell the pizza before you see it. Lasagna in Delray Beach is not one thing, it is a thousand things, from a food truck where the shortrib slab owns the tray to a tiny room where Roberto remembers your name and you feel safe.

I ate the lobster vodka pasta with a beach view and I watched a man eat garlic knots like they were a religion. The city is small but the Italian is enormous.

I found Mattiello's House of Lasagna parked in a lot, which feels right. It is a food truck with alfresco vibes, meaning you eat outside and hope the breeze does not steal your napkin. Guillermo hands you a plate like he has known you forever, and that is a good trick. The shortrib lasagna is the star, a slab of meat and cheese that sits in the tray like it owns the place. I ate it once and now it is my Thursday ritual. Great for a movie night date because you can take it to the beach or a bench. Weird, but true. It is fast, honest, and warm.

Segreto Italia is a tiny room that somehow holds a big welcome. You need a reservation, and I mean that. I walked in once without one and the host looked at me like I had asked to borrow his car. The service gets there before you ask, which is a superpower. The lasagna and the ragú bolognese are the anchors, but Chef Glenn does not hide in the back. He knows what the pot is doing. The tables are close, which is fine. You just might make a friend or hear about their divorce. Either way, the food makes up for it. I left full and a little confused about why everyone was so nice.

Avellino’s is the place you drive past, then turn around because you saw the garlic knots in some window. Those knots are perfect, salted and chewy like they do not care about your cholesterol. The brick oven makes the pizza have serious crunch, the kind that talks back to you when you bite. The veal Parm sub is a repeat offender, good every time. No one sings, but the food is the loudest thing in the room. For miles around, this is the best Italian food, and I do not say that lightly. I say that with a full mouth. That is rare.

Casalina is the spot I would choose for a dream baby shower, if I knew what that meant. I imagined a lot of balloons and people eating too much pasta. The staff is attentive to the point of psychic, and the patio is cute enough that I almost sat on the grass. There are real vegan and vegetarian options, and I say that as a person who has watched a friend eat a sad salad. They have a DJ-ready space, meaning you can dance while you digest. The food is good, the service is warm, and I left wondering if I should adopt a child. I did not. But the place left a mark, so there.

Tramonti is a place where Roberto comes to your table and you immediately feel safe. That is the right service, he remembers your name and your order. The meatballs defy physics, they are dense but they fall apart at a touch, and I did not understand why until I decided to stop asking questions. The red sauces are real, especially the Diavolo, which gives a gentle heat that gets my mouth. The tradition is etched into the walls, you can feel the pasta being rolled for fifty years, even if the stove is new. I eat the lasagna and I think, this is what Italy is about, if Italy were in Florida. It is close.

Le Sorelle is loud, in the best way. The staff are all walking welcome mats with elbows. The king prawn is not a salad; it is the giant one that you get and everyone else in the restaurant looks at. I said WOW out loud, and people did not laugh because they needed to. The wood fire pizza is a standout, charred edges that snap. The whole place feels like one big table. The owner, Anna, moves through the room and some sort of warm faint. I asked for a lasagna and she took care of it. It is a place where you eat and then the time gets you on the cheek on the way out.

I came for the sunset, but I stayed for the lobster. The lobster vodka will ruin every other pink sauce you that a ocean. I did not order the mahi-mahi, but the table next to me did, and the crispy top made me question my life choices. The service is fast even when the place is full, which is a feat, because the beach view makes people not want to leave. Nicole, the server, pointed me at the specials and she was right, which is annoying in a good way. I watched the sun fall while the vodka pasta cooled. So good. I almost forgot I was in Florida.

Grelma is a bakery that does not just do the bread, it does the whole lasagne situation. The husband-and-wife team make things like they are for their own army, which I respect. The take-home lasagne is a real bolder, you buy it and you have dinner for a family and then the next day's lunch. The currants, or should I say carry the secret, and the tiramisu is a light, buttery plate of yes. The bread is soft and the secret starter, so the inside has tiny holes, like a memory. It is not a restaurant full of tables, but you do not need to. You get the white box, then you go home. I did not want to, but I them.

Fratellis is so good it is worth standing on the linoleum on the weekend. I waited, I do not regret. The owners are in the front, friendly flowers to everyone. The calamari fra diavolo had a kick, I had to drink water and I liked it. The Caesar salad came to the table and then I heard people whisper, best we have ever had, and they were not wrong. The pizza is a returning fan, the crust is the kind you chew and remember. But the lasagna, the star of the evening, is a layered that. It is not fancy. It is just certified. So go early, because the wait is but worth.

Casal' Acqua is down a street that makes you think the revolution ended, and a patio is waiting. The outdoor tables are the real reason you come, even when you are sweating just a little. The service is so good that you start to feel guilty because they are not paid enough. You order a cocktail first, that is not a choice, it is a ritual. The negroni was there, a class of calm. The lasagna is consistent, which sounds boring, but in this world, consistency is a miracle. It is quiet here, unlike Atlantic Avenue, and I sat there and did not check my watch. I will come back just for the patio and the quiet. Good.

MIA is the place you go when you want a lasagna and also, accidentally, a party. Happy hour is a blinking light from the kitchen, and the cocktails come out bold. I had the PB&J foie gras, which sounds like a prank, but it is a real, weird, delicious starter. The pasta with lump crab came, and I forgot the rest of the menu. The service is that kind of pacing, you get the appetizer, then you rest, then the main arrives. The room is loud, full of people who are pushing their chairs back. It is a fun, packed energy. The lasagna is there, but the crab pasta is the person that we stand in line for. My list anyway, go for the crab and a side of happy. I am not a single one.
